
Peel and finely dice the onion and sauté in vegetable oil until translucent. Add the curry powder and sweat, then deglaze with the balsamic vinegar. Add the remaining ingredients, season with a little salt, finely puree and simmer for about 5 minutes.
In the meantime, fry the veggie bratwurst on all sides for a total of 7-8 minutes.
Finally, cut the veggie bratwurst into pieces, pour over the hot sauce and sprinkle with some curry powder.
This can be served with either bread rolls or fries as a side dish.
Pro tip: The cherry jam can also be replaced by other flavours such as pineapple, peach or orange, depending on your personal taste.
